can achieve or maintain 55F with a relative humidity of 90%?

I'm trying to build a vegetable / fruit / cold humidifier to keep the specific food groups to 55-65F, while 85-95% RH. I can get it or not, but both simultaneosuly. Using Thermoelectric AC and humidifier on hand. I managed 59f and 90% HR! I had to use a huge AC 75 watts. Total cubic are only + / – 4 CuFt and has 1 "insulation R5 on 5 sides with plexiglass to see face during the test. So I think that is finishing very low in RH? If you were to take a closed volume of air and cool slowly, the RH should actually increase. According to a psychrometric chart (which shows how these things work), if you started at room temperature, about 70F, at 50% relative humidity, then you end up with about 85% at 55F. But what is probably happening is that your cooler TEC runs much cooler than air temperature. The TEC must remain above the dew point (wet bulb temperature), water condenses in the air the cooler in the ECT, especially if you are pumping water in a humidifier. In 95% humidity, the coldest part of the TE cooler can only be approximately 1 degree below the temperature of air – so cool it will take more and more time for cooling without condensation. Some thoughts … first, use a thermal insulator to create a kind of separate volume of air that separates the air holding the fruit of the cold walls of the TEC. Obviously, this will to be more time to cool, but there could be some kind of valve that opens to allow the two volumes of mixture, then closes when you want to hold moisture. Then the humidified air is extracted directly from the closed volume – so that moist air can not enter into contact with surfaces below the dew point. (This is how the section works fruit bar – something to keep the fruit separate sealed the cooler walls of the refrigerator) If you are doing bang-bang control thermostat in your refrigerator, which also might not work … you may want to consider a simple proportional control, or controller PID type. Finally, did not mention how your humidifier, but if it comes to heat water at all, it will not work. The air and water involved must be cooled to the temperature as well as within its volume of almost closed. As someone mentioned, a water vapor may be what you are looking for. But again, if you can prevent air dry first, you should need very little moisture at all – the ambient air contains almost all the water it needs, provided they do not lose water to the condensation.
